Palak paneer is a popular North Indian dish.
Paneer cooked in creamy spinach gravy,
makes it a delicious main dish.
Serve palak paneer,
with naan,
paratha,
or with rice.
This was one of the recipes,
I have done earlier,
when I had just starting posting on YouTube.
Over the years even my family says,
that I have improved.
My cooking has really improved.
Thanks to all my viewers,
who have helped me,
and I do want to do my best.
I decided to do this recipe again.
This recipe will serve 3.
To make palak paneer, we will need
10 ounces of spinach,
washed and cleaned.
This will make 8 cups of spinach.
1.5 cups of paneer cut into bite sized cubes,
1 tomato finely chopped
this will make upto 3/4 cup of chopped tomato.
1 green chilly chopped.
1 tablespoon of chopped ginger.
1 tablespoon of oil.
1/2 teaspoon of cumin seed (jeera).
1/8 teaspoon of asafoetida (hing)
1 teaspoon of coriander powder (dhaniya)
1/4 teaspoon of turmeric (haldi)
1/2 teaspoon of red chilli powder
1/2 teaspoon of salt
1/2 teaspoon of sugar.
1 tablespoon of whole wheat flour
and 1/3 cup of heavy cream.
First, I will soak the paneer,
in hot water atleast for 5 minutes.
This gives the soft and nice texture,
to the paneer.
It should be soaked atleast 5 minutes or longer.
So, we will keep this one side.
Now we are going to
mix the whole wheat flour.
with about 1/2 cup of water.
Just to make a paste.
Now I will blanch the spinach.
Blanching the spinach keeps the
spinach colour bright.
So here I have 6 cups of water,
already its boiling.
I will put the spinach in this.
Just for about 2 minutes.
And just boil it,
for about 2 minutes.
And then we will transfer these spinach,
into the cold, ice cold water.
It has been about 2 minutes.
I will turn off the heat.
And just transfer the spinach,
into the cold water.
Keep the spinach in cold water,
for about 2-3 minutes.
And then drain all the water.
I have drained the water.
Now I will blend the spinach, ginger,
and green chilly for about 1 minute.
It should be creamy,
but it should not become pasty.
So here is the spinach.
Green chilly,
and ginger.
Look at this. It has been about 1 minute,
and the spinach has blended.
Now we are going to make the palak paneer.
Now I am ready to make palak paneer.
Heat is on.
Medium-high.
I am using a frying pan.
So use a bit bigger pan than you need.
Because we don't cover the spinach,
when we are cooking,
and it does splatter a little bit.
I will first put the oil.
Oil should be moderately hot,
before we add the cumin seed.
Cumin seed,
asafoetida,
As soon as all the cumin seeds crack,
we are going to add the tomato.
And then add all the spices.
Turmeric,
salt,
sugar,
coriander powder,
and red chilly powder.
Stir for about 1 minute,
so tomatoes are little bit tender.
Not very soft.
This has been about 1 minute,
lower the heat to low medium,
and add the spinach.
Mix it well.
Cook the spinach over low medium heat.
Do not cover the pan.
After it comes to boil,
then you should cook for about 5 minutes.
This has been about 5 minutes.
So I will add the whole wheat flour,
and cream.
Mix it well.
And let this cook again for 5 minutes,
over low medium heat.
This has been about 5 minutes.
I did stir in-between couple of times.
This looks a little bit thick so,
I will add 1/4 cup of water.
Just bring it to boil again.
And now add the paneer.
I have already drained the water.
Mix it well.
Again let this cook for another 5 minutes.
This has been 5 minutes.
Palak paneer is ready.
It has taken me,
from beginning to now,
18 minutes of cooking time.
Palak paneer is ready.
This is a delicious dish,
and favourite for my grandkids.
Today I will be serving this,
with naan.
