Homemade Low Fat Cream Cheese Recipe | How to make Low Fat Cream Cheese at home
Make this extremely low fat homemade Cream cheese and relish it in your favourite recipe without any guilt. This fresh Low-fat cream cheese has about 40 percent less calories than regular cream cheese. Opting for this lighter version allows you to enjoy cream cheese without going overboard on fat and calories. Ingredients to make low fat Cream Cheese:- 1/2 litre low fat skimmed cow milk 1.5-2 tsp lime/lemon juice 1 pinch salt ( optional) Method to make low fat Cream Cheese:- 1. Heat milk in a heavy bottom pan when the milk starts to boil add 2 tsp of lemon juice. Keep stirring 2. Soon the milk will start to curdle, when you milk solids separated from the water, switch off the flame. 3. In a large bowl, place a strainer and cover it with a cotton/muslin or cheese cloth, pour the curdled milk on top. 4. This way the water will get separated from the solid. 5. Use this leftover water in preparing dal, rice, dough or any batter. 6. Now add the solid into a grinder on top add a pinch of salt ( optional). 7. Grind to a smooth paste, if you see fine grains add some left over water and grind again. 8. When you get a very smooth creamy texture that means your cream cheese is ready. 9. You can store it in an airtight container for up to 6-7 days in fridge. You can garlic paste to it for flavour and use it as a spread. Other than that you can use it to make cheese cakes, other desserts, toasts, sandwiches, dips, salads or spread it on your parathas.
